Beans Carrot Thoran

Thoran is an integral pert of Kerala meals. It can made with most vegetables or comibation the usual ones being beans, carrot, cabbage, cauliflower etc. Any where, any time you order Kerala meals there will be one or two thoran or vegetable stir fry with it. In my house mostly for lunch or dinner, there will be a Non veg curry, vegetable thoran and moru curry. Beans Carrot Thoran Recipe


 Ingredients:

  • Beans – 150g
  • Carrot  – 150g
  • Mustard seeds – ½ tsp
  • Small onion – 5
  • Green Chilli  – 3-4
  • Garlic – 2
  • Turmeric powder – ¼  tsp
  • Grated coconut –  ½  cup
  • Curry leaves – few
  • Water – ¼ cup
  • Oil – 3 Tbsp
  • Salt

 

(Note: 1 Cup = 250 ml

Vary amount of chilli as per your spice level)

 

Method: (With Step-by-step pics)

Take beans and carrot

 

Finely slice beans and grate carrot and keep it ready

 

Heat oil in a pan and splutter mustard seeds. Add finely sliced small onion, garlic and green chilli and sauté until its soft

 

Add beans and carrot and salt

Mix well. Add water and cover and cook until it becomes soft

 

Add grated coconut, mix well and continue to cook covered until everything is cooked well. (If you adding coconut in the beginning just put it on the top. Mix only after vegetables turn soft. Do a taste test and add salt if required)

 

Add few curry leaves on top and serve hot.
