Vegetable Pulav Recipe
Ingredients: (Serves 2-3)
- Basmati Rice – 1 ½ cup
- Ghee – 4 tbsp
- Fennel seeds – ½ tsp
- Cinnamon (Karuvapatta) – 1 ½ inch stick
- Cardamom – 3
- Bay leaves – 1
- Cloves – 3
- Ginger garlic paste – 1 ½ tsp
- Water – 2 ¾ cup
- Mixed vegetable (Carrot, beans, green peas) – 1 cup
- Chilli Powder – ¼ tsp
- Salt
(Note: 1 Cup = 250 ml)
Method: (With Step-by-Step Pictures)
Wash and drain the rice and keep it ready.
Heat 2 tbsp of ghee in a cooker. Add all the spices and saute for a min. Add ginger garlic paste and sauté for a min.
Add rice and fry for 2-3 mins stirring continuously.
Add water and pressure cook ( I go for 1 whistle. After the whitsle immediately remove the cooker from the stove.)
Once the steam goes remove the lid and keep the cooker open
Heat the remaining ghee in a pan and add sliced vegetables. Add chilli powder and salt and sauté till is cooked. Switch of the stove.
To the pan add 1/3 rd of the rice prepared and 1/3 rd of vegetables. Mix well. Repeat the same for remaining rice in two batches. (When u do it in batches, mixing becomes easy)
Cover and cook in low flame for 2-3 mins. Serve hot.
