Veg Fried Rice

Vegetable Fried Rice Recipe

Ingredients: (Serves 3-4)

  • Basmati Rice – 1 ½ cup
  • Water – 2 ¾ cup
  • Ghee/ Oil – 2 Tbsp
  • Onion – 1 medium (finely chopped)
  • Beans – 1/3 cup (finely chopped)
  • Carrot – 1/3 cup (grated/chopped)
  • Green Peas (pacha pattani) – 1/3 cup
  • Chilli sauce – 1 tsp
  • Pepper powder – ½ tsp
  • Soya sauce – 3 tsp
  • Spring onion – 2 spring (finely chopped)
  • Salt

(Note: 1 cup = 250 ml
I prefer the taste of ghee better because of which I used the same.
Take beans, carrots and peas which are tender ones. It will taste better)

 

Method: (With Step-by-Step Pictures)

Wash and drain the rice well. Heat 2 tbsp of ghee in a cooker.
Add rice and saute for 2-3 min stirring continuously

 


Add water and pressure cook ( I go for 1 whistle. After the whistle immediately remove the cooker from the stove)

 


Once the steam goes remove the lid and keep the cooker open

 


Heat the remaining ghee in a pan and add sliced onion.

 


Once onion becomes soft add sliced beans, carrot. Sprinkle salt and mix well. Cook covered till its cooked stirring in between.

Add green peas and mix well. (I used very tender ones because of which I added in the end.)

 


Switch of the stove and add chilli sauce and pepper powder and mix well.

 


Take a bowl and take ¼ th of the rice prepared. Add ¼ th of the vegetable mix and ¾ tsp of soya sauce.

 


Mix well so that vegetables and soya sauce are evenly distributed. On the top of it add the next ¼ th of the rice and repeat the same steps. Continue it for the full rice prepared.

 


Garnish with spring onion and serve hot.
