Most of the chicken fry I had been either too hard or wont be cooked proper inside. This recipe is one of the best method to make good chicken fry. Chicken fried will be soft inside, crispy outside and will be cooked perfect and the curry leaves fried along with it gives a special taste. The steaming part of chicken does all the trick. Try it out, I can bet you will then make chicken fry this way only. And thanks a lot Susamma Aunty for teaching me this method.

Chicken Fry Recipe
Ingredients:
- Chicken – 500g (Cut into medium size pieces)
- Oil – To fry
To Marinate:
- Chilli powder – ¾ tsp
- Kashmiri chilli powder – ½ tsp
- Ginger garlic paste – 3 tsp
- Turmeric powder – ½ tsp
- Pepper Powder – ½ tsp
- Lemon juice – 2 tsp
- Curry leaves – a handful
- Salt
(Note: 1 Cup = 250ml. vary the amount of chilli as per your spice level)
Method:
- Clean and wash the chicken pieces. Squeeze it well so as to remove water well from it.
- Mix all the ingredients to marinate. Sprinkle little water into it and make it to a paste. Add cleaned chicken into it and keep it for half an hour.

- Take the marinated chicken in a pressure cooker. Cover it with the lid without putting the cooker whistle. Steam the same. ( A steady steam should come for 2 min)
- Open the cooker and if stock is there, cook without putting the lid till chicken is fully dry.
- Heat oil in a nonstick pan and add chicken pieces and curry leaves.
- Fry in medium- high flame until chicken pieces are brown in color.
- Server hot.
Tips:
- Always put curry leaves when you are frying chicken pieces. It will give a good taste.

Hi.. Can I leave the marination overnight???
Hi Angela…… Yes you can do that. Keep it in the fridge, overnight. Chicken becomes soft also

Good to hear you talk good about your mother in law which rarely happens in India 😁. I tried your mutton roast recipe too…. Came out very well.
