Ladoo

 Diwali is fast approaching. Decided what sweet you are going to make? Well my all time favorite is ladoo. I have mentioned before also I like sweets a lot, in fact my family loves it a lot. Since I don’t get Kerala style ladoo here I decided it to give it a try. I always had a perception that it was difficult to make ladoo. But believe me its easy and the happiness that you get after making it is priceless.

 


Ladoo Recipe

Ingredients:

  • Basen (kadalamavu) – 1 ½  cup
  • Rice flour – 2 tbsp
  • Baking powder – 2 pinch
  • Water – ¾ cup + 3 tbsp
  • Ghee – 3 tbsp
  • Cardamom powder – ¼ tsp
  • Cashew nuts – 1 ½ tbsp
  • Raisins – For decoration
  • Yellow food color (Optional)
  • Oil – for frying

 

For Sugar Syrup

  • Sugar – 1 ½ cup
  • Water – 1 ¼ cup
  • Cardamom powder – ¼ tsp

 

Method:

 

 

 

 

 

 

 

 

 

  • Mix well basen, rice flour and baking powder. Add water little at a time and make it into a good paste (It should be slightly thicker than dosa batter)

  • Heat oil in a pan. Drop 2-3 drops of batter into the oil. Its it rises immediately oil is ready for frying.
  • Pour batter through the perforated spoon or boondi ladle. Spread the battle with a spoon so that small drops fall in to the oil.
  • Fry till its golden brown in color in medium heat. Repeat it for the rest of the batter.

 

 

 

 

 

 

 

 

 

  • To prepare sugar syrup, take sugar and water in a pan and mix well. Bring it to boil. Continue to boil till you get one string consistency (When you take few drops between index finger and thumb and pull it apart it should from a string)
  • Add boondis to the sugar syrup prepared. Break cashew nuts into small pieces and fry it and add it to the sugar syrup. Add ghee and mix well.

 

 

 

 

 

 

 

 

 

  • Allow it to cool down to a temperature your hands can withstand. Make it into even balls and put a raisin on the top. Allow it to cool down completely.
