Chicken Biryani Recipe
Ingredients: (Serves 4-5)
- Chicken – 500g cut into medium size pieces
- Onion – 2
- Tomato – 1
- Ginger garlic paste – 3 tsp
- Green Chilli – 4-5
- Coriander leaves – handful
- Turmeric powder – ½ tsp
- Coriander powder – 3 tsp
- Biryani Masala/Garam masala – 1 tsp
- Water – ½ cup
- Oil
- Salt
To Marinate: (For Chicken)
- Chilli powder – ½ tsp
- Kashmiri chilli powder – 1 tsp
- Turmeric powder – ¼ tsp
- Ginger garlic paste – 2 tsp
- Yogurt – 2 Tbsp
- Salt
For Rice:
- Basmati Rice – 2 Cup
- Ghee – 2 Tbsp
- Water – 3 ¾ Cup
- Cloves – 2 nos
- Cardamom pods – 3 nos
- Cinnamon stick – 1 inch piece
- Bay leaves – 1 no
- Briyani Masala – 1 tsp (optional)
- Salt
For Garnishing:
- Cashew – 3 Tbsp
- Raisins – 2 Tbsp
- Onion – 1
- Coriander leaves
- Ghee – 3 Tbsp
(Note: 1 Cup = 250 ml
I used Shaan Biryani Masala. If you prefer less amount of gravy for the chicken reduce the amount of onion for chicken masala preparation
I didn’t use coriander leaves as my family doesn’t like the taste of it.)
Method: (With Step-by-Step Pictures)
Mix all the ingredients to marinate. Add cleaned chicken into it and keep it in the fridge for half an hour.
Heat oil in a nonstick pan and roast the chicken until its light brown in color. Remove it from the pan
To the same pan add sliced onion and sauté till onion turns brown in color (It takes approx 15 mins for this step)
Add sliced tomato and cook till it becomes soft.
Add ginger garlic paste, green chilli and saute for 2-3 mins. Add coriander leaves and sauté for a min.
Add all the spice powder, salt and sauté it for 2-3 mins
Add fried chicken pieces and mix well so that chicken pieces will get coated well with the masala.
Add water and cook with the pan covered till chicken is cooked well and is almost 90% dry. (Check whether chicken is cooked well. If not add additional water and cover and cook till its done)
For the rice part, wash rice and drain it well
Heat ghee in a cooker and add all the spices and sauté for a min.
Add rice and sauté it for a min.
Add water, salt and mix well. Pressure cook the same and wait for 1 whistle and immediately remove the cooker from stove.
Once the whistle goes completely immediately remove the cooker lid and leave it open.
Preheat the oven to 180 Deg. Take a baking dish and apply some oil. Put one layer of rice in it.
On the top put a layer of chicken with masala. Repeat the same till rice and chicken is finished. The top layer should be rice.
Cover it with an aluminium foil and bake in a preheated oven for 10-15 mins.
Garnish the baked Biriyani with fried cashew, raisins, onion and coriander leaves.

Madam, after “Pressure cook the same and wait for 1 whistle and immediately remove the cooker from stove”, confirm the rice is only partly cooked? if so, is it half cooked?
Hi Jag….. The rice will be fully cooked by one whistle. Since its Basmati rice and we are cooking in cooker, the cooking time is less. Once the steam drops u need to open the cooker and leave it open, else it ill get over cooked. Hope i am clear.
