Rabri/Rabdi

Rabri/Rabdi Recipe

Ingredients: (Serves 3-4)

  • Milk – ½ Litre
  • Bread – 2 slice
  • Condensed Milk – ¼ cup
  • Sugar – 3 Tbsp
  • Saffron – few strands
  • Cardamom powder – of 2 Pods
  • Dry fruits (Cashew/ pistachios) – 1 Tbsp

(Note: 1 Cup = 250 ml
Vary the amount of sugar as per your sweet level)


 

Method: (With Step-by-Step Pictures)


Remove the sides of the bread slices

 


With your fingers crumble the bread slice to make it to bread crumbs. (Alternately bread slices can be grinded in the mixer also)

 


Take the milk in a pan along with bread crumbs and bring it to boil.

 


Once milk boils add condensed milk, sugar and mix well.

Increase the flame and stir continuously for 6-8 mins or till the milk mixture thickens. If any big bread pieces are there press it with a spoon so that it becomes part of milk. (The mixture thickens further once it cools down. So switch of the stove accordingly)

 


Switch of the stove and add cardamom powder and saffron strands and mix well. (To make it attractive for my little one I added 2-3 drops of food color) . Add dry fruits on the top. Refrigerate it for 1 or 2 hrs and serve chilled.
