Plum Cake Recipe
Ingredients:
- All purpose flour – 2 Cup
- Baking powder – 1 ½ tsp
- Salt – one pinch
- Powdered Sugar – 1 ½ cup
- Butter – 250 g
- Eggs – 6
- Vanilla essence – 1 tsp
- Orange zest powder – 1 tsp
- Dry fruits/nuts – 3 Cup (dates/apricot/ cherries/black raisins/Nuts etc, 3 Cups measured after slicing)
- Grape Wine – 1 Cup
Spices:
- Cinnamon powder – ½ tsp
- Cloves Powder – ¼ tsp
- Cardamom powder – ½ tsp
- Dry ginger powder – ½ tsp
- Nutmeg powder – ¼ tsp
Caramel Syrup (Method Here)
- Sugar – ½ cup
- Water – ¼ cup
(Note: 1 Cup = 250 ml.
Whenever you are mixing for the cake with hand or hand mixer, you should mix in one direction only to get soft cakes.
Make sure all the ingredients are at room temperature before you start mixing
Make sure your oven settings are correct, else cakes won’t come proper)
Method: (With Step-by-step pics)
Take the dry fruits and nuts of your choice and slice it. Take 3 cups of sliced dry fruits
Add wine to it and mix well. Leave it at room temperature for 1 or 2 days. I kept it for 1 day and by this time full wine was absorbed by the fruits.
Toss it with 2 Tbsp of flour and keep it aside
Preheat oven to 175 degree. Line two 8 inch pan with butter paper and keep it ready. In a medium bowl, whisk together flour, baking powder, salt, all spices. (If you don’t have the spices in powder form, take whole spices and and ¼ cup sugar and grind it into powder with the help of a mixer)
Take butter in a bowl (butter at room temperature)
With the help of mixer beat until it is creamy
Add powdered sugar and mix well. Add 2 eggs at a time and mix well
Mixture will be creamy
Now add caramel prepared and orange and vanilla essence, orange zest powder and mix (Caramel syrup recipe here)
Add ¼ th of flour mixture and fold gently.
Add the remaining flour in 3 portions and fold gently
Add the dry fruits and fold gently
Pour it in the prepared pan and level the mixture. Reduce the oven temperature to 160 and bake for 50-60 mins or until a tooth pick comes out clean from the middle of cake
Remove cake from oven and allow it to cool completely. The cake tastes better the next day. It takes some time for the flavors to settle to get the perfect taste.
