Chciken tomato roast

This is my Mother’s famous recipe. It’s so famous that my relatives invite her to make this curry for our family functions. It doesn’t have much gravy, but the chicken pieces are so well coated with masala that we keep aside rest all curries and finish it first 🙂 . Its little time-consuming but the steps are very simple. Try it out and bring this special curry to your table.

 


Chicken Tomato Roast Recipe

 

Ingredients:

  • Chicken – 500g (cut into medium pieces)
  • Fennel Seeds – ½ tsp
  • Onion – 2
  • Tomato – 2
  • Green Chilli  – 2
  • Ginger  garlic paste – 2 tsp
  • Kashmiri chilli powder – ¾ – 1 tsp
  • Turmeric powder – ½  tsp
  • Coriander powder – 2 tsp
  • Garam masala – 1  tsp
  • Curry leaves – few
  • Oil – 5 tbsp
  • Salt

 

To Marinate

  • Red chilli powder – ¾ – 1 tsp
  • Turmeric powder – ½  tsp
  • Coriander powder – 2 tsp
  • Ginger garlic paste – 1 tsp
  • Salt

 

Method:

 

 

 

 

 

 

 

 

 

  • Wash the chicken pieces and press it well so as to remove water well from it
  • Mix all the ingredients to marinate. Add chicken pieces into it and mix well
  • Add one sliced onion and mix well.Do not add water and pressure cook the marinated chicken pieces  ( When the whistle is about to come immediately remove the cooker from stove. Be sure not to over cook the chicken pieces. Alternatively you can shallow fry the marinated chicken pieces.)

  • Heat oil in a pan and splutter fennel seeds.
  • Add sliced onion and curry leaves.
  • Cook with the pan covered and stir in between till onion turns golden brown in color (It takes approx 15-20 mins for this step)
  • Add sliced tomato and sauté till it becomes soft and oil starts appearing on the sides of the pan.

 

 

 

 

 

 

 

 

 

  • Add ginger garlic paste, green chilli and saute for a min.
  • Add all masala, salt and sauté for a min or two

 

 

 

 

 

 

 

 

 

  • Add cooked chicken and mix well. Cook with the pan covered in medium flame for 5-6 min.
  • Now remove the lid and cook till the curry becomes completely dry. ( Stir in between and if the masala is sticking to the pan, keep adding little oil in between)
