Chemmen Manga Curry Recipe
Ingredients:
- Prawns – 200g ( cleaned)
- Small Onion – 6-8 (crushed)
- Ginger garlic paste – 2 ½ tsp
- Green chilli – 3-4
- Turmeric powder – ½ tsp
- Coriander powder – 1 tsp
- Raw mango – 1 (small)
- Thin coconut milk – 1 cup (first press)
- Thick coconut milk – ¾ cup (second press)
- Curry leaves – few
- Mustard seeds – ¼ tsp
- Oil – 5 Tbsp
- Salt
(Note: 1 Cup = 250 ml
Vary the amount of chilli as per your spice level)
Method: (With Step-by-step pics)
Remove skin of mango and slice it to long pieces. Clean prawns and keep it ready
Heat 3 Tbsp oil in a pan and add crushed small onion and curry leaves and saute till onion becomes soft.
Add green chilli, ginger garlic paste and saute for a min.
Add all spice powders and sauté for a min or two
Add sliced mango, cleaned prawns and saute for a min. Add thin coconut milk and salt and mix well. Cook with the pan covered in low-medium heat till everything is cooked (Swirl the pan in between)
Add thick coconut milk
Cook for another 5-6 min in low flame. Remove pan from the stove.
Heat 2 Tbsp oil in a small pan and splutter mustard seeds. Add few curry leaves and pour it over the curry prepared. Keep the pan closed for some time and serve after 3-4 hrs of preparation for the flavors to settle in. Enjoy!!!!!
