Beef Thoran Recipe
Ingredients: (Serves 3-4)
- Beef – 500g
- Oil – 3 Tbsp
- Fennel seeds – ½ tsp
- Small onion – ½ cup (crushed)
- Ginger garlic paste – 2 tsp
- Cardamom pods – 2-3
- Coriander powder – 2 tsp
- Garam masala – 1 tsp
- Turmeric powder – ½ tsp
- Vinegar – 2 tsp
- Grated coconut – ½ cup
- Curry leaves – handful
To Marinate
- Chilli powder – 1 tsp
- Pepper powder – 1 tsp
- Coriander powder – 3 tsp
- Ginger garlic paste – 2 tsp
- Salt
(Note: 1 cup = 250 ml
Vary the amount of chilli as per your spice level. Increase the amount of vinegar if you like tangy taste)
Method: (With Step-by-Step Pictures)
Wash beef and cut it into small pieces. Mix all ingredients to marinate. Add cut beef pieces and mix well. No need to add water. Pressure cook marinated beef till beef is cooked well. (I usually go for 3-4 whistle and then switch of the stove. Wait for the steam to go completely and then open the cooker). If stock is there when you open cooker, cook without putting the lid till beef is almost 80% dry.
Heat oil in a pan and splutter fennel seeds
Add crushed small onion and sauté till it becomes soft.
Add ginger garlic paste and cardamom pods and sauté for a min or two
Add all spice powders, salt and sauté for 2-3 min or till oil starts appearing on sides of pan.
Add cooked beef and mix well.Cook in medium flame and keep stirring in between till you notice beef starts to become dry.
Add grated coconut and mix well and continue to cook (Add oil if its sticking to the pan)
Cook till beef is completely dry and becomes dark brown in color. Add a handful of curry leaves on the top. Serve hot.
