Strawberry Cake Recipe
Ingredients:
- All purpose flour – 2 cups
- Baking powder – 2 tsp
- Salt – ½ tsp
- Sugar – 1.5 cups
- Vegetable oil – 1 cup
- Eggs – 2
- Strawberry essence – 3 tsp
- Pink food color – few drops
- Lemon/fruit juice – ½ cup ( drinking consistency)
- Curd – 2/3 cup
(Note: 1 Cup = 250 ml.
Make sure all ingredients are at room temperature and oven settings should be in baking mode
Whenever you are mixing for the cake with hand or hand mixer, you should mix in one direction only to get soft cakes.)
Method:
Preheat oven to 175 degree celsius. Line cake pan with baking sheet (butter paper) and keep it ready.
In a medium bowl, whisk together flour, baking powder and salt. Set aside.
In a large bowl take sugar and vegetable oil. Mix with a mixer in high speed until its combined well
Mix in the eggs one at a time in high speed.
Add strawberry essence and pink food color. Add the dry ingredients to it, little at time (about 2Tbsp) mixing after each addition, just until combined. (All the steps from this step should be done in low speed)
When you find it difficult to mix alternatively start adding curd and mix until combined.
Add lemon/fruit juice and mix until everything is combined.
Pour the batter evenly into the cake pan. Bake in the middle rack for 30-40 minutes, or until a toothpick comes out clean.
Let cool on a cooling rack until the pan is warm to the touch. Remove the cake from the pan and let it cool. Serve and Enjoy!!!!
