Kala Jamun Recipe
Ingredients:
- Milk powder – 1 cup
- Cardamom powder – ¼ tsp
- All purpose flour (Maida) – 1/3 cup
- Baking soda – ¼ tsp
- Curd – 2 Tbsp
- Milk – ¼ cup
- Oil – 2-3 tsp
- Oil/ghee – for frying
For Sugar Syrup
- Sugar – 1 ¼ cup
- Water – 2 cup
- Cardamom powder – ¼ tsp
(Note: 1Cup = 250 ml)

Mix together milk powder, cardamom powder, maida and baking soda
Add curd and start mixing gently.
Add milk half portion at a time and mix again. When it starts to stick to your palm, add 2-3 tsp on the top of the dough and little on your palm and make it to a soft dough and leave it for 10 mins
Now start making sugar syrup. Take water, sugar and cardamom powder in a pan
Bring it to boil and let the syrup boils well for 6-8 min until syrup is thick. (The syrup needs to thicken only. No need to be one string consistency)
Now take the dough and make it to 20 balls ( the size may look small, but the size increases after frying and putting in sugar syrup)
Heat oil in a pan and fry in low-medium heat turning them in between till its light brown in color
Remove it from oil. Finish off frying all dough balls.
Now fry them again, turning continuously in between until its brown in color (The color darkens further once we soak it in syrup)
Remove it from oil and directly put it to sugar syrup prepared
Let the jamuns be in syrup for 3-4 hrs. Serve and enjoy!!!! (The jamuns prepared tastes better the next day)
