Most of my Vegetarian friends has been asking for an eggless cake recipe for long. I have tried couple of times before, but I was not very satisfied with the end result. I decided to change the mixing method this time and finally I got an eggless cake which is soft and moist. Just you need to be sure that initial mixing of wet ingredients with sugar should be at high-speed and when adding dry ingredients to the mixture it should be mixed at medium speed.
Eggless Chocolate Cake Recipe
Ingredients:
- All purpose flour (Maida)– 1 ¼ cups
- Baking powder – 1 ¾ tsp
- Cocoa powder – 4 tbsp
- Sugar – 1 cup
- Vegetable oil – ½ cup
- Curd – 1 cup
- Vanilla extract – 2 tsp
- Salt – ½ tsp
(Note: 1 Cup = 250 ml)
Method:
- Preheat oven to 325. Line cake pan with baking sheet (butter paper) and keep it ready.
- In a medium bowl, whisk together flour, baking powder, cocoa powder and salt. Set aside.
- In a large bowl take sugar and vegetable oil.
- Mix with a mixer in high-speed until its combined well

- Add the dry ingredients to it, little at time (about 2 tbsp) mixing after each addition in medium speed. (If you are finding it difficult to mix, add little curd in between)
- Add to it vanilla extract and the remaining curd and mix.
- Pour the batter evenly into the cake pan.
- Bake in the middle rack for 30-40 minutes, or until a toothpick comes out clean.
- Remove the cake from the pan and let it cool.

I have a question regarding the buttermilk. For homemade buttermilk(for this recipe) what is the ratio of curd and water?
Hi Hamsa,
Its the curd or yogurt which we need to add to the recipe. You don’t need to add any water to it. Abroad what we get named buttermilk is same as curd what we get in India. Just wrote recipe with that in mind, i have corrected it in the recipe to avoid confusion. Curd is added as a substitute for egg. Another substitute is condensed milk. Cakes with condensed milk as egg substitute comes out better when compared with curd.

Hello, i have 2 questions. 1. Can I yse baking soda instead? 2. I want to make a 9 inch round cake. What size cake does this recipe make? How do I scale?
Hi Kj,
You can use 3/4 tsp baking soda and 1 tsp baking powder for the above recipe. You can use a 9 inch pan. Above quantity gives you approx 700g of cake once baked.
