Easy Rasmalai Recipe
Ingredients:
- Paneer – 250 g
- Milk – 4 cups
- Sugar – 1 cup
- Saffron – few strands
- Cardamom powder – ¼ tsp
- Chopped Nuts – 3 Tbsp
For Sugar Syrup
- Water – 5 Cups
- Sugar – 1 Cup
(Note: 1 cup = 250 ml)
Method: (With Step-by-Step Pictures)
Lets make rabdi first. Take 4 cups of milk in a bowl. Add sugar and bring it to boil. Once its boiled reduce the flame. Take 3 Tbsp of warm milk and add it to saffron strands. Give a good stir and pour it to milk.
Continue to cook in low to medium flame until milk thickens and reduces to half. Add cardamom powder and mix well and remove it from stove.
Take paneer in a bowl and crumble with your fingers. (I used store bought ones. If you want to make at home, follow the steps here)
Knead it well so that it becomes soft and smooth and comes together (you need to knead almost 8-10 mins to reach this stage)
Make it into 10 small balls. Gently press it in the centre You don’t need to worry about the size, as it almost doubles after the final step.
In a bowl boil water along with sugar.
Once sugar is dissolved and water starts to boil well add the prepared paneer balls.
Reduce the flame and cover it with a lid and boil for 8-10 mins till the balls double in size.
Now gently take it from sugar syrup and put it to the Rabdi prepared.
Add chopped nuts on the top. Serve and Enjoy!!!!
