I got this recipe from my friend Sandhya almost 10 yrs back when I went to her house for lunch. Avial which she was prepared had more gravy than any other that I had tasted before and the main ingredient in it was raw banana. I liked it so much and immediately took the recipe. Now here its there for all.
Avial Recipe
Ingredients:
- Raw banana – 3 medium
- Carrot – 1 big
- Potato – 1 big
- Drumstick – 1 big
- Beans – 6-7
- Turmeric powder – ½ tsp
- Curd – ½ cup
- Salt
For Grinding:
- Grated Coconut – ½ cup
- Green Chilli – 3
- Jeera – ½ tsp
For Seasoning:
- Oil
- Curry leaves – few
- Dry Red chilli – 3
Method:
- Cut all the vegetables in to 2 inch long pieces
- Add salt, turmeric powder and 1 ½ cup of water and pressure cook the vegetables (I usually go for 1 whistle)
- Coarsely grind grated coconut, green chillies and cumin seeds.
- Add it to the cooked vegetables and cook for 2-3 min in medium flame.
- Beat curd in the mixie for 3-4 sec so that no lumps are there
- Add it to the cooked vegetables and cook for 1or 2 min in low flame
- For the seasoning heat oil in a pan and splutter mustard seeds. Add dry red chilli and curry leaves and pour it over the avial. Mix well and serve hot
Tips:
- If you want avail to be semi dry reduce the amount of water while cooking
- You can take vegetables of your choice.
