Red velvet Cake with Cream Cheese Frosting

 

I am so happy to share this recipe, because this is the cake which I made for my sons first birthday. I made it and decorated with whatever little I knew since it was to cut at home only. It is moist, soft and the best part is cake is red in color. So many of my friends had asked for this recipe. The first photo is of my son’s first birthday  and second one is of my husbands birthday. I am sure i have improved in the cake decoration part also. I have kept this recipe to make cake for special occasion. Thanks Food Network for the recipe source.

Red Velvet Cake Recipe

 

Ingredients:

  • All purpose flour – 2 cups
  • Baking powder – 2 tsp
  • Salt – 1 tsp
  • Cocoa powder – 2 tbsp
  • Sugar – 2 cups
  • Vegetable oil – 1 cup
  • Eggs – 2
  • Buttermilk – ¾  cup
  • Vanilla extract – 2 tsp
  • Red food coloring – 1 oz.
  • Vinegar – 1 tsp
  • Plain hot coffee  – ¼ cup (1/2 tsp of coffee powder)

Cream Cheese Frosting Recipe

  • Cream Cheese  – 1  cup softened
  • Butter – ½ cup softened
  • Icing sugar – 2 cups
  • Vanilla extract – 1 tsp

 

 

Method:

 

 

 

 

 

 

 

 

 

  • Preheat oven to 325. Line a cake pan with baking paper and keep it ready.
  • In a medium bowl, whisk together flour, baking powder, cocoa powder and salt. Set aside.
  • In a large bowl, combine the sugar and vegetable oil (at high speed)

 

 

 

 

 

 

 

 

 

  • Mix in the eggs (one at a time) until combined again at high speed
  • Combine the wet ingredients with the dry ingredients a little at time, mixing after each addition, just until combined. (If you are finding it difficult to combine, add little butter milk in between)

 

 

 

 

 

 

 

 

 

 

  • Add rest of butter milk and vinegar and mix with medium speed
  • Add food color and hot coffee and do the final mixing with medium speed

 

 

 

 

 

 

 

 

 

  • Pour the batter evenly into the pan.
  • Bake in the middle rack for 40-45 minutes, or until a toothpick comes out clean.
  • Slide a knife or offset spatula around the inside of the pans to loosen the cake from the pan.
  • Remove the cake from the pan and let it cool.
  • To make the cream cheese frosting: in a bowl beat together cream cheese and butter until creamy. Add in icing sugar and beat for a minute. Add vanilla and mix well. Spread it over the cake. (I have not covered the cake decoration part here. I will be soon writing posts on it)
