Lemon Rice (Kerala Recipe)

 

Lemon Rice

Lemon rice reminds me of my days in Bangalore. One of my colleague used to bring this for lunch. She used to bring different variety of rice, a simple chutney or a pickle and it was awesome. But some how I never used to try variety in rice until recently . I was inspired by my friend and neighbour to start making the same.

 

Lemon Rice Recipe

Ingredients:

  • Rice – 1 ½  cup
  • Mustard Seeds – 1 tsp
  • Lemon – 1
  • Urad dal – 1 tbsp
  • Chana dal – 1 tbsp
  • Peanuts – 3 tbsp
  • Dry Red Chilli – 3
  • Green chilli – 2
  • Turmeric powder – ½ tsp
  • Asafoetida – a pinch
  • Curry Leaves
  • Oil
  • Salt

 

Method:

 

 

 

 

 

 

 

 

 

 

  • Cook the rice and keep it ready ( I used Basmati rice.I added twice the quantity of water and ½ tsp of salt and waited for 1 whistle in the cooker. After the whistle immediately remove the cooker from the stove. Once the steam goes remove the lid and keep the cooker open and allow rice to cool)
  • Squeeze lemon and keep the lemon juice ready

 

 

 

 

 

 

 

 

 

 

  • Heat oil in a pan and splutter mustard seeds
  • Add urad dal, chana dal and peanuts and fry till it becomes crisp

 

 

 

 

 

 

 

 

 

 

  • Add dry red chilli, green chilli and curry leaves and cook for 2 min
  • Add turmeric powder and asafoetida and give a stir
  • Add lemon juice and remove the pan from the stove

 

 

 

 

 

 

 

 

 

 

  • Add it over the cooked rice. Mix and serve hot
