Lemon Rice

Ingredients
  • Rice – 1 ½ cup
  • Mustard Seeds – 1 tsp
  • Lemon – 1
  • Urad dal – 1 tbsp
  • Chana dal – 1 tbsp
  • Peanuts – 3 tbsp
  • Dry Red Chilli – 3
  • Green chilli – 2
  • Turmeric powder – ½ tsp
  • Asafoetida – a pinch
  • Curry Leaves
  • Oil
  • Salt
Instructions
  1. Cook the rice and keep it ready ( I used Basmati rice.I added twice the quantity of water and ½ tsp of salt and waited for 1 whistle in the cooker. After the whistle immediately remove the cooker from the stove. Once the steam goes remove the lid and keep the cooker open and allow rice to cool)
  2. Squeeze lemon and keep the lemon juice ready
  3. Heat oil in a pan and splutter mustard seeds
  4. Add urad dal, chana dal and peanuts and fry till it becomes crisp
  5. Add dry red chilli, green chilli and curry leaves and cook for 2 min
  6. Add turmeric powder and asafoetida and give a stir
  7. Add lemon juice and remove the pan from the stove
  8. Add it over the cooked rice. Mix well and serve hot
