Lemon Cake Recipe
Ingredients:
- All purpose flour – 2 cups
- Baking powder – 2 tsp
- Salt – ½ tsp
- Sugar – 1 ¾ cups
- Vegetable oil – 1 cup
- Eggs – 2
- Lemon essence – 3 tsp
- Fruit juice/orange juice – 1 cup
- Yellow food color – 2 tsp (optional)
- Grated lemon zest – 3 tsp (grated lemon skin)
- Buttermilk – ¾ cup
(Note: 1 Cup = 250 ml. When ever you are mixing for the cake with hand or hand mixer, you should mix in one direction only to get soft cakes. The consistency of butter milk should be same as that of dosa batter. It should not be very thin. When ever you are mixing wet ingredients u should mix in high speed. When you start adding dry ingredients it should be mixed in low speed)
Method:
- Preheat oven to 325. Line cake pan with baking sheet (butter paper) and keep it ready.
- In a medium bowl, whisk together flour, baking powder and salt. Set aside.
- In a large bowl take sugar and vegetable oil.
- Mix with a mixer in high-speed until its combined well
- Mix in the eggs one at a time in high-speed
- Add fruit juice, yellow food color and mix in until combined.
- Add grated lemon zest and mix in low-speed.
- Add the dry ingredients to it, little at time (about 2 Tbsp) mixing after each addition, just until combined.
- Add to it butter milk and mix until combined.
- Pour the batter evenly into the cake pan.
- Bake in the middle rack for 30-40 minutes, or until a toothpick comes out clean.
- Let cool on a cooling rack until the pan is warm to the touch.
- Remove the cake from the pan and let it cool.
