Chicken Gravy: Chicken Roast (kerala Style)

Chicken Roast Gravy

 

This is again another dish with good gravy. I always try to make curry with good gravy because my husband is very particular about it. Even I remember my father also used to tell my mother to prepare curry with good gravy. I am sure this recipe will be helpful for many.

Chicken Roast Recipe

Ingredients:

  • Chicken – 500g (cut into medium pieces)
  • Onion – 2 big
  • Fennel seeds (perumjeerakam) – ½ tsp
  • Tomato – 2 medium
  • Ginger  garlic paste – 3 tsp
  • Red chilli powder – 1 tsp
  • Turmeric powder – ½  tsp
  • Coriander powder – 4 tsp
  • Garam masala – 1 ½  tsp
  • Water – 1/2 cup
  • Coconut Milk – 1   cup
  • Curry leaves – few
  • Cashew nuts – 2 tsp
  • Oil
  • Salt

 

To Marinate

  • Red chilli powder – 1 tsp
  • Turmeric powder – ½  tsp
  • Ginger garlic paste – 1 tsp
  • Lemon juice – 1 tsp
  • Salt

 

Method:

 

 

 

 

 

 

 

 

 

  • Mix all the ingredients to marinate. Add little water into it and make it to a paste
  • Add chicken pieces into it and mix well. Keep it in the fridge for half an hour
  • Heat oil in a pan and roast the chicken pieces till its light brown in color

 

 

 

 

 

 

 

 

 

  • To the pan add fennel seeds, sliced onion and curry leaves.
  • Cook with the pan covered and stir in between till onion turns brown in color (It takes apprx 15-20 min for this)
  • Add sliced tomato and cook till it becomes soft

 

 

 

 

 

 

 

 

 

  •  Add ginger garlic paste  and cook for 2-3 min.
  • Add red chilli, turmeric, coriander powder, garam masala and cook for 2-3 min.
  • Add water and mix well.
  • When it starts boiling add fried chicken.

 

 

 

 

 

 

 

 

 

  • Add coconut milk and cook in medium flame with pan covered till it starts boiling and becomes thick and oil starts appearing on the top
  •  Garnish with cashew nuts and serve hot with appam, pulao

 

Tips:

  • If you have the option to grill chicken instead of roasting, go for it. It will taste even better.
