Kadai chicken roast

Kadai chicken is one of the popular classic chicken recipe ever found. Here I used iron kadai which is very healthy as well as it brings a special taste for the the cooked item. Making kadai chicken at home is really simple and tasty.

Kadai Chicken Roast recipe

Ingredients: 

  • Chicken – 700 g
  • Onion – 2 big
  • Tomato – 1
  • Green Chilli – 4
  • Ginger Garlic paste – 1½  tsp
  • Kashmiri Chilli powder – 1 tsp
  • Turmeric powder – ½ tsp
  • Coriander powder – 1½ tsp
  • Garam masala – ½ tsp
  • Curry leaves – few
  • Oil
  • Salt
  • Sugar

To marinate

  • Red chilli powder – ¾ tsp
  • Kashmiri chilli powder – ¾ tsp
  • Coriander powder – 1½ tsp
  • Turmeric powder – ½ tsp
  • Garam masala – ½ tsp
  • Ginger garlic paste – 1 tsp
  • Vinegar – 1 Tbsp
  • Salt

 

(Note: Vary the amount of chilli as per your spice level)

Method:(With Step-by-step pics)

 

 Wash the chicken pieces and put it for drain for sometime.

 

Slice the onions and green chilli in parallel.

 

Mix all the ingredients to marinate. Add chicken pieces to it and mix well. Add one sliced onion, 2 green chillies and curry leaves to it. Pressure cook the same without adding water. Remove the cooker from the stove immediately after one whistle and open the lid after 3-4 minutes.

 

Heat oil in iron kadai (Iron kadai is very healthy and brings special taste to the cooked items) and add sliced onion, green chillies, curry leaves and salt and stir in between.

 

When onion becomes soft, add ginger garlic paste and stir it until it becomes golden brown color. (Take time for this step. Saute well until its golden brown. This step plays a key role in bringing taste to your curry)

 

Then add sliced tomato to it.

 

Then cover the lid for 2-3 minutes and sauté it till it becomes soft.

 

Add all masalas to it and stir well.

 

Sauté it until oil starts appearing on the sides of the pan.

 

Add cooked chicken along with half of the chicken stock found in the pressure cooker. Cover the lid and cook it for 5 minutes. Add little oil if it is sticking to the pan.

 

Then add remaining chicken stock and cook till it reaches desired dryness. Stir in between. Sprinkle a small pinch of sugar on it and stir well. Serve hot and enjoy!!!
