Neychoru (Ghee Rice)

Ingredients
  • Basmati Rice – 2 cup
  • Ghee – 6 tbsp
  • Onion – 1
  • Fennel seeds – ½ tsp
  • Cinnamon (Karuvapatta) – 2 inch stick
  • Cardamom – 4
  • Bay leaves – 1
  • Cloves – 4
  • Water – 4 cups
  • Raisins & cashew nuts – ½ cup
  • Salt
Instructions
  1. Wash and drain the rice well
  2. Heat 3 tbsp of ghee in a cooker.
  3. Add all the spices and saute for 2-3 min
  4. Add finely chopped onion and cook till it becomes soft
  5. Add rice and fry for 5-6 min stirring continuously
  6. Add water and pressure cook ( I go for 1 whistle. After the whistle immediately remove the cooker from the stove. Once the steam goes remove the lid and keep the cooker open)
  7. Heat ghee in a pan and fry sliced onions, raisins and nuts. Garnish with the same. Pour the left over ghee over the cooked rice. Serve hot.
