Unniappam

Unniappam is a traditional sweet snack of keralites.  Of course, its name itself is creating a nostalgic feeling to all of us. Here, it is a very simple and easy recipe for making this delicious sweet snack.

Ingredients:

  • All purpose flour/Maida – 2 cup
  • Jaggery – 2 cup
  • Water – 1 cup
  • Grated coconut – ½ cup
  • Baking powder – 1 tsp
  • Black sesame seeds – ¾ tbsp
  • Cumin seeds (powdered)/Jeeraka podi – ½ tsp
  • Oil

(Note: 1 Cup = 250 ml)

 

Method:

Grind all purpose flour, jaggery, coconut and water together for a minute (just for the mixing purpose).

Pour it into a vessel and add baking powder, sesame seeds and cumin seeds powder and stir well.

Put unniappam chatti on fire and add oil.

When oil becomes hot, pour the batter upto half of the pits using a tablespoon. It will rise itself to the remaining portion.

Once the color starts changing, turn the unniappam to other side. Do this until it gets a dark brown color.

Then take it from the pits using spoon and drain it using tissue.

(Note: If jaggery is not good quality, melt it using above 1 cup of water and sift it to get pure molasses. Then grind all purpose flour,coconut and molasses to get the batter. Do not add water again.)
