This is one of the easiest recipe you can try for Strawberry sponge cake. The result is super soft, moist and fluffy cake. Its my family’s favorite cake. Its a treat to the eyes when you see a flat top crack free cake out of oven. Give it a try, i am sure you will love it πŸ™‚

Easy Strawberry Sponge Cake


  • All purpose Flour/ Maida – 1 ΒΎ cup
  • Cornflour – 4 Tbsp
  • Baking powder – 2 tsp
  • Salt – one pinch
  • Powdered Sugar – 1 3/4 cup
  • Sunflower oil – 1 cup
  • Eggs – 4
  • Strawberry essence – 3 tsp
  • Pink food color – few drops
  • Lemon juice/Fruit juice – Β½ cup (drinking consistency)


(Note: 1 Cup = 250 ml.

Whenever you are mixing for the cake with hand or hand mixer, you should mix in one direction only to get soft cakes.

Make sure all the ingredients are at room temperature before you start mixing. If any ingredients are in fridge keep it outside minimum half an hour before you start mixing process

Make sure your oven settings are correct, else cakes won’t come proper)



Method: (With Step by step pics)

Preheat oven to 175 degree. Line a 10 inch cake tray or two 8 inch cake tray with butter paper and keep it ready.Sift together flour, cornflour, baking powder and salt. Repeat this step twice. Dry ingredients is ready now.


In a large bowl take powdered sugar and oil. Mix with a mixer in high speed until its combined well.


Add eggs one at a time and mix with high speed.


Add strawberry essence, pink food color and mix. (Don’t worry about the color. If you feel color is less you can add food color at later stage also)


Add the dry ingredients to it, about 2Tbsp at a time mixing after each addition, just until combined. (all step from this step should be done in low/medium speed.


When you start finding it difficult to mix start adding juice and mix (you can use lemon juice or any fruit juice for this recipe. If using lemon juice make it just like how you can drink it and add for recipe)


Batter is ready (The batter prepared will be runny). Pour the batter in the baking tray


Bake for 50-55 minutes, or until a toothpick comes out clean.


Allow the cake to cool down. When baking tray is cool enough is touch remove cake from baking tray. Allow cake to cool down completely. The cake tastes better the next day. Serve and Enjoy!!!!!
